Best Scones Ever

Today I decided to make Scones, the best scones ever

Lemonade Scones

I am using a recipe from my husband’s Grandmother, and it makes the best scones ever.

The best thing is this is such a simple recipe and uses a key ingredient Lemonade, yes you read right Lemonade. It is; so easy even Kids can make them.

What do you need;

The Ingredients

4 Cups of Self Raising Flour
300Ml Cream
1/4 Cup of White Sugar
350ml lemonade (I use Sprite) or Soda Water, I find the Lemonade gives a slightly sweeter and softer texture
1/2 Tea Spoon Salt
1 Cup Sultanas (or any other dried fruit) or (choc chips)

Method

Combine all ingredients in a bowl and mix to a smooth dough, get your hands in or your kids. My youngest 3yo loves scone making getting her little fingers in and covered in flour and sticky dough.

Mixing Scones

The mixture can be quite sloppy, so now tip it out onto a floured bench. Knead with flour until the dough is firm and malleable, form into a ball and press into a greased baking tray until about 2-21/2 cm thick.

If you have smaller trays like I do (about 20cm in diameter) break your dough ball in half and press into each tray as above.

Using a Plastic Knife cut your scones into your desired size, I like about 5cm x 5cm, don’t worry about cleanly separated cuts, after baking they will break easily at the cut.

Cut Scones

Now Bake in a Preheated 220°C Oven for approximately 15-20mins depending on your oven until a light Golden Brown. Check by sticking in a probe, I use a Chopstick, if it inserts easy and comes out dry and clean, then, they are cooked.

Baking Scones

Turn them out onto a wire rack to cool, I turn them into a Tea Towel this helps retain the moisture and keeps them soft.

Variations

There is a multitude of variations you can do, if you like savory scones use Soda Water instead of Lemonade, add some bacon, onion, and some grated cheese in your mix and bake as above.

Add Chocolate Chips for a bit of that Chocolate indulgence fix.
