Nigerian Tomato Soup

This simple Nigerian Tomato Soup recipe was given to me by our housekeeper while my husband was working in Lagos Nigeria, thank’s Doris.

This is a very easy to make soup you can put together and have served within 10-15 minutes. I would often make it when my husband came home for lunch, (we lived and worked in a company estate) and I would serve with some crusty bread or toasted cheese sandwiches.

Nigerian Tomato Soup

Quick and simple for a meal in a hurry.

2 servings


  • 1 Tbsp Butter
  • 4 Tsps Plain Flour
  • 1 Stock Cube
  • 4 Cups Water
  • 1 Rasher Bacon Chopped Diced
  • 1 Carrot Chopped Diced
  • 1 Small Onion Chopped Diced
  • 5 Tomatoes Medium Sized
  • 2 Tbsp Tomato Paste
  • 1 Tbsp Mixed Herbs
  • Salt & Pepper to taste


  1. In a blender mix Tomatoes and Butter, Tomato Paste and Herb Mix until smooth.
  2. Boil water with Stock Cube added, once boiling add Tomato mix bring to boil and then add Bacon and Carrot, simmer for about 2 minutes and serve.
  3. Serve, with Freshly Baked Crusty Buttered Bread Rolls and top with a few fresh Basil leaves.


  • You can use Cream in place of Butter.
  • Use Stock Powder if you don’t have Maggi Cubes use Beef or Chicken
